Homemade Mie Ayam

Mie Ayam is very popular in Indonesia, actually it is noodle soup with chicken topping. Usually the noodle is served separately with the soup so the customers can adjust how much soup they want to be added to their noodle. 
I've heard someone said if you want to make a good noodle, use duck egg instead of chicken egg, it gives you better texture. Since i didn't find duck egg here, i couldn't prove what he said. Anyway this noodle recipe is quiet good, i think it is similar with pasta dough (more or less).

The chicken topping in this recipe is more like chinese style chicken, i got the recipe from my uncle who runned a small noodle restaurant few years ago.

Noodle Recipe:
300 gr flour
2 eggs
water 4 tbs
1/2 tsp salt

Tip:
-if you want the noodle to be more elastic, add 1 egg white instead of water.
-sprinkle with corn starch before cut the noodle if you don't cook it right away, so the noodle wont become sticky

Soup Recipe:
1.5 liter water
1/4 part of chicken
2 spring onion
2 garlic
1/2 tsp sesame oil
1.2 tsp sugar
1 tsp sugar
black pepper
1/2 block instant chicken soup

Chicken Topping Recipe:
2 chicken breast
1/2 red onion
3 garlics
3 tbsp sweetened soya sauce (Kecap Manis)
1 tbsp soya sauce
1 tsp salt
1.5 tsp sugar
1/2 tsp tsp sesame oil
black pepper
2 tbsp cooking oil
1/2 cup water

Chili Topping Recipe:
2 tsp chili paste (homemade)
1 tsp white vinegar
2 tbsp water
pinch of salt
