This is one of our favorite vegetarian dish. It can't go wrong with any kind of vegetable as long as you have pumpkin, yogurt and coconut milk.
Recipe:
1 cup broccoli
3/4 cup pumpkin
1 cup pumpkin for gravy
2 potatoes
2 carrots
1/2 onion
1 garlic
1 ginger
1 tbsp cooking oil
1 tbsp butter
1/2 tsp kummin seeds
1 tbsp koriander powder
1.5 tsp turmeric powder
1 tsp curry powder
1 bay leaf
2 green cardamon
salt & black pepper
1/2 tsp sugar
1 cup chicken or vegetable stock
1/2 cup coconut milk
1/3 cup yogurt
1/4 cup heavy cream or milk
